Red Quinoa

I have had a few requests to post some recipes after I wrote about Eating healthy on a time budget, and I am happy to see interest in my blog posts and especially an interest in some extremely healthy recipes!

I will post more recipes of the amazing food I eat but I will admit that I don’t do all of the cooking. I have been enjoying a lunch swap program with a friend of mine who I used to work with. He would bring lunches on two days, I would bring lunches on the other two days, and then Friday was spent going out.

My friend is an amazing cook and has opened my eyes to some wonderful new food I’d never heard of. We both share an intense love of good food, cooking and eating (of course). I recommend that you check out his blog too, Spilling my Beans, as he has some amazing recipes (and I constantly bug him to post more often).

As for today’s recipe, it’s a twist on a wild rice and edamame salad that I came across. I prefer to eat quinoa to any other grain because of the numerous health benefits. I adore edamame but it’s difficult to find fresh, so lentil seemed like a great substitute. There are many different kinds of quinoa that you can get – red, white black – but I think they really only differ from the colour. From my experience, the taste is pretty similar. I prefer the red because makes for a really attractive dish when it’s done.

I love having healthy people around me…they sooooo motivate me to maintain my healthy habits.

At my old work, my friend Jen was (still is) a crazy health nut. Well, not crazy as in “Don’t mind if I do!!” but crazy as in “Wow, she really knows her shit.” She was also an awesome cook and baker. We called her Martha Stewart every time she brought something healthy (and uber tasty) in to the office.

At my new place of employment my habits started to slip. It was easy to join in to the occasional Harvey’s run. And popcorn and pop snack. Or sometimes not eat altogether.

Then Jamie got hired and Jamie likes to cook. He also is a big advocate of unprocessed foods. He encourages me to eat better and doesn’t even know it. I’ve been cooking a lot more often again. Tonight’s meal was Vegetarian Bean Curry and it especially made me think of Jamie and his food. I was thinking of bringing some into work to share with him because it is so tasty.

From time to time Jamie will share a tasty recipe and bring some delish grub into work.

Sometimes, however, he makes some delish grub and just blogs about it and doesn’t even bring some into work. What a jerk. Even when I made a comment about it…he still forgot.

So, I had to bribe him. I told him I’d do a review on his tasty grub if he’d bring some in. He complied (thank god).

Anyway, the review was on Mexican Scalloped Potatoes:

They were really, really, really tasty and I would eat them again.
